Creamy Parsley Sauce

     Ingredients:

 

    • 3 tablespoons of Freshly chopped parsley

    • 50g butter

    • 50g plain flour

    • 600ml semi-skimmed milk

    • salt and pepper to taste

1. Heat a small saucepan and melt the butter and add the flour, stirring continuously until the mixture forms a smooth ‘roux’

2. Take the pan off the heat and add the milk gradually as you stir. Return back to the heat and bring to the boil, making sure you continue to stir or whisk the sauce.

3. Once you have brought the sauce to the boil, reduce the heat and simmer for about 2 minutes stirring occasionally. When you have a thick smooth sauce, add your chopped parsley and season to taste.

  Ingredients:

 

  • Bunch of freshly grown SeedCell coriander

  • Handful of freshly grown SeedCell cherry tomatoes

  • Red onion

  • Olive oil

  • Chillies (for a fiery taste)

Mexican Style Tomato and Coriander Salsa

1. Chop up your fresh coriander and place into a bowl

2. Finely slice your onions (and chillies if using) and add to the coriander

3. Chop your tomatoes into small chunks and add to the bowl

4. Add a few ‘glugs’ of olive oil to your mixture and toss.

5. Serve with Tortilla chips and guacamole.

  • New baby potatoes

  • Bacon Lardons

  • Light mayonnaise (if you’re being healthy)

  • Dijon mustard

  • Salt

  • Pepper

American Style Potato Salad

1. Place potatoes into a large saucepan and fill with water until they are covered. Bring to boil, then reduce, cover and cook for 15 to 20 minutes.

2. Drain and cool, cut into chunks, and place into a serving bowl.

3. Add pre cooked bacon lardons and chopped chives.

4. In a separate bowl, mix the mayonnaise, mustard, salt and pepper. Spoon this mix over the salad, and toss to get a good coating.

5. Place salad in the fridge for an hour before serving.

Pesto

  Ingredients:

 

  • A large handful of freshly grown SeedCell basil

  • A clove of garlic

  • Pine nuts

  • Olive oil

  • Parmesan

  • Salt

  • Pepper

1. Grind up the garlic in a pestle and mortar with a dash of salt.

2. Add the basil and pine nuts and grind into a thick paste.

3. Add a splash of olive oil and some grated parmesan and continue to crush together until smooth.

4. Season with salt and pepper to taste.

  Ingredients:

 

  • A bunch of fresh SeedCell sweet peppers

  • A handful of fresh SeedCell chives

  • A few leaves of fresh SeedCell basil

  • Semi soft goats cheese (optional with a cheese preference)

Cheese and Chive Stuffed Peppers

1. Cut the tops off of your sweet peppers and remove the seeds.

2. Chop your herbs and in a separate bowl mix them in with the goats cheese.

3. Spoon the cheese mixture into the chopped peppers.

4. Place stuffed peppers into an oven preheated to 180°c for 8 to 10 minutes.

5. Alternatively grill on a BBQ.

Tomato, Basil and Cheese Omelette

Ingredients:

 

  • A handful of fresh seedcell tomatoes

  • A few leaves of fresh seedcell basil

  • 2 eggs

  • A knob of butter

  • Olive oil

  • Grated cheddar cheese

  • Salt

  • Pepper

1. Crack the eggs into a bowl with a pinch of salt and pepper and beat well

2. Add the tomatoes, chopped in half, to a small frying pan on a high heat. Also add a small knob of butter and a splash of olive oil to the pan, with another pinch of salt and pepper. Fry for about a minute before turning down the heat to medium.

3. Add the eggs to the pan.

4. Add the grated cheese and basil once the omelette has started to cook, but there is still a little raw egg on top.

5. Remove from heat and plate up when the omelette is golden brown on the bottom.
